Owners of popular Chinese restaurant awarded one-star hygiene rating reveal how they turned it around

Owners of a popular Chinese restaurant warned by food hygiene inspectors to make major improvements has spoken of his relief after receiving a top new rating.

Alan Tai of Silver Star in Maghull said the restaurant is “as it should be” after turning the initial ‘one’ rating into a ‘five’ – indicating a very good standard.

He says the kitchen has been thoroughly cleaned and that raw chicken is no longer kept in a bucket on the floor.

He said: "[The chicken] was only ever there temporarily, just before it was about to be cooked, it was never stored there for any length of time.

"But we have taken all the inspectors' advice on board. The staff have undergone extensive training and everything is spotless.

"We have upped our game, and everything is as it should be."

Alan said the bad rating back in February came after staff had "been a bit lax after coming back from a holiday", but that measures have been taken to ensure standards will not slip again.

Environmental health officers had previously found a catalogue of problems at Silver Star, and staff were told they must wash their hands after using the toilet; handling rubbish; smoking; taking a break; and handling raw food.

However, following a reinspection on May 8, the Liverpool Road restaurant now has the highest hygiene rating that can be given.
