Eating low carb is a key diet rule for Michael Mosley, creator of the 5:2 diet.

He walked through his simple Thai salmon supper recipe he enjoyed whilst on a diet, The Express reported.

The 5:2 diet creator is a TV presenter, former doctor and the author of several diet books that hinge on intermittent fasting - that is, diets that include fasting and eating only at specific times.

He said: "Simmering away here, I have some salmon. What I have done is I've fried it up with some onions and a little bit of ginger.

"I put in two tablespoons of red Thai curry paste and some coconut milk."

In place of rice, Mosley served grated cauliflower "rice" with the salmon supper.

He said: "I've got some cauliflower rice, which is just some grated cauliflower.

"I'll microwave it in a minute, and I've got some greens here as well."
