A woman has been charged with allegedly helping the owner of a luxury Sydney jewellery store plan the robbery of his own business.

Police say two men threatened staff at Germani Jewellery's Hilton Hotel shop during an appointment at about 6:30pm on January 19.

The assailants allegedly gained access to the safe and stole "a substantial amount of jewellery" before fleeing the scene.

Detectives charged the store's owner, Michel Germani, with a string of offences on May 8 and allege he orchestrated the armed hold up to defraud an insurance company.

Mr Germani was also at the shop during the alleged heist.

He has been charged with aggravated robbery and depriving a person of liberty, attempting to dishonestly obtain a financial advantage by deception, publishing false or misleading material to obtain property, and participating in a criminal group.

Two other men, aged 37 and 57, were previously arrested at Homebush West and Auburn and were charged with aggravated armed robbery.

A female employee, 47, was allegedly bound during the incident and left "absolutely traumatised", police have said.

Investigations under Strike Force Ingestre have continued and at about 11:50am on Friday, Giulia Penna presented herself to Burwood police station.

Ms Penna, 57, has been charged with with aggravated robbery and depriving a person of liberty, accessory before the fact, and participating in a criminal group.

Police allege she was involved in assisting Mr Germani in planning the robbery on January 19.

Ms Penna was refused bail by police and appeared before Burwood Local Court today.

She made no application for release and will next appear at the same court on May 29.

Earlier this month, Detective Superintendent Joe Doueihi said Mr Germani was allegedly involved in planning and coordinating the robbery.

"I can indicate there is sufficient evidence that would implicate the store owner in orchestrating the two males to conduct that robbery upon his store," he said.

Investigations continue.
