Vegan pie business The Pie Box to open permanent shop in Cardiff

The Cardiff-based vegan business, The Pie Box, is opening its first permanent store in Cardiff. The business, which sells delicious vegan pies and cakes, used to only appear at food markets, food festivals and for private hire and it will now have its own store.

The Pie Box is run by Sophie Scott who started the business three years ago after making her friends a vegan pie and they loved it so much she started doing it professionally. She said: "I have always wanted to start my own business so I was keeping my eyes open for any opportunities, one day I made a really good pie for some friends and from there just kept making pies until I thought 'yes this is the one.'

"We organised a pop-up at Kings Road Yard in Pontcanna and the response we got from customers was overwhelmingly positive and the business just kept growing from there." The store will open on Tudor Street in Riverside where the location is currently being used as a prep kitchen for The Pie Box.

Sophie is hoping to open the store within the next six months as a pie shop where customers can also enjoy eating in the evenings. Recently The Pie Box had a very successful run as a pop-up in the city centre bar and cafe Scaredy Cats.

Speaking about this next step for her business Sophie said it was exciting and scary. She said: "This next step has been super exciting, but also very scary, I've never done anything like this so everything is very new to me, there's a lot to be done to get it to the stage it needs to be but I can't wait to bring The Pie Box to the next level and see where else it goes!"

She explained why it was time for the business to take its next steps: "The Pie Box has been running successfully for the last few years so it was just the right path to take to continue organically growing, the demand for our food has been growing steadily and all of our prep was being done from a shared kitchen so we outgrew the space."
