TV chef Adrian Martin to open luxurious new fine dining restaurant in Dublin

TV chef Adrian Martin is opening a new restaurant in Dublin with some interesting dishes and specialised cocktails.

Wildflower Restaurant by Adrian Martin will be located on South Richmond Street in a listed Georgian house.

With a mission of providing food as nature intended, Adrian says opening a restaurant in Ireland has "always been a dream of mine".

He describes the menus as a celebration of his roots with all dishes paying homage to his upbringing in County Cavan.

"It reminds me of growing up and the taste and smell of my grandmother's kitchen," he said.

"I've had my eyes peeled just waiting for the right location and as soon as I walked through the door, I knew this was it.

"While I have created new dishes inspired by the producers we are working with, I have also kept some dishes that are dear to my heart such as our bread recipe, Sourdough Fermented Stout Bread, which we serve with Irish cultured butter, with Guinness jelly to spread on top."

Diners enter the restaurant at street level and will be greeted in the Champagne Bar, which is complete with original sash windows, wooden floors, high ceilings and original architraves.

Customers can expect champagne by Piper-Heidsieck as well as cocktails using spirits fermented in-house, including the Gooseberry Collins, Nettle Gimlet and Dandelion-Root Martini.

You then enter The Good Room, a 20 seater dining room featuring luxurious French antique armchairs. Here is where you will discover the menu Adrian has created featuring dishes such as Hand Dived Scallop Ceviche with Meadow Sweet and Oscietra Caviar, and Glazed Thornhill Duck with Foie Gras, Onion Miso, Vetch and Sauce Grand Veneur.

For dessert, there is the Valrhona White Chocolate Cremeux Tart with Wild Strawberries, Fig Leaf and Marigold.

Additionally, there is the stone staircase which takes guests to Cellar at Wildflower, which has space for 12 diners, an outdoor terrace and a tasting menu for €100.

The tasting menu includes signature dishes like Jerusalem Artichokes with Leek Ash and Yarrow, and Wild Halibut with Courgette Flower Brandade, Sea Aster and Truffle.

Adrian trained in some of Ireland's most renowned restaurants including MacNean House and Michelin-starred restaurant Bon Appetit in Malahide.

He has since become a regular on Irish TV screens appearing on shows such as Virgin Media’s Six O’Clock Show, RTE's Chef Adrian Eats Ireland and Cook on Amazon Prime Video.

Wildflower Restaurant opens next Wednesday, February 2 with bookings now available online.
