Shane Murphy, 27, was pronounced dead at his Carrigaline home while his father Patrick, 75, was rushed to hospital with serious injuries following the attack in the early hours of Saturday morning.
Emergency services rushed to the house in the Sea View estate but despite their desperate efforts Shane passed away.

Patrick, known locally as Weeshie, was taken to Cork University Hospital where his condition was described as "serious".
A suspect who is known to both men was arrested shortly after and taken to Gurranbraher Garda Station on the northside of Cork city.
It's understood Shane was stabbed in his chest, and his body remained at the scene through Saturday morning.
He was transferred to CUH at around 11.30am where Assistant State Pathologist Dr Margot Bolster is set to carry out a postmortem.
The garda forensics team remained at the scene through the day and it's understood the knife believed to have been used was recovered.
Tributes have been pouring in for talented golfer Shane who won multiple pitch and putt competitions and was an All-Ireland champion.
He was also well known on the local soccer scene as he'd played underage with both Carrigaline and Crosshaven.
Patrick is also a keen golfer and recently became a great grandfather.
Neighbours were left shaken at the news with one telling the Mirror how they'd lived in the estate over 40 years and had never seen any kind of trouble.
She said: "The lads are very nice and love their golf. It's horrendous to see what's happened.
"You always see things like it in the news, and today I woke up and read it then realised it's only a few doors down."
The Murphy family have been hit with other tragedies in recent years, with Shane's mother Marie passing away following a battle with illness in 2012.
A year later his brother Mark died by suicide. His other siblings are living and working in the area.
Gardai have been carrying out door to door enquiries in a bid to piece together how it all unfolded.
They've made an appeal to anyone in the Carrigaline or Passage West areas who may have information to contact them.
A spokesperson said: "Gardaí are investigating a fatal stabbing incident that occurred in the early hours of this morning Saturday 26th March, 2022 at a house in Carrigaline, Co. Cork.
"At approximately 3.30a.m. this morning Gardaí were called to the scene of a serious assault in Sea View Avenue, Carrigaline where a man (27 years) was discovered with serious stab wounds.
"Gardaí and emergency services attended to the man but he died at the scene. The body remains at the scene and the scene is currently preserved. The State Pathologist has been notified.
"Gardaí were advised that a second man (75 years) attended Cork University Hospital with serious stab wounds and remains in a serious condition and is being treated at CUH.
"A 42-year-old man has since been arrested and is currently detained under Section 4 of the Criminal Justice Act, 1984 at Gurranabraher Garda Station.
"Gardaí are appealing to any persons who were in the areas of Carragaline and Passage West in the early hours of this morning, who may have noticed any activity which caught their attention or can assist Gardaí to contact them at Togher Garda station on 021 4947120, the Garda Confidential Line 1800 666 111 or any Garda Station."
Local Independent Cllr Ben Dalton O'Sullivan sent his condolences to the family in what he described as an "extremely sad time".
He told the Mirror: "My thoughts and prayers are with the family and wider community, this is an extremely sad time.
"I encourage anyone who may have information to contact gardai and help them with their investigation.
"Carrigaline has a strong community and I have no doubt the great people there will give nothing but support. We were all shocked to wake up to this news."
Sinn Fein TD Donnchadh O Laoghaire described the incident as "completely shocking" and "impossible to comprehend".
He said: "Devastating news coming out of Carrigaline this morning. Completely shocking, impossible to comprehend. Such a young life taken away.
"My thoughts with the family and friends and the wider community in Carrigaline, Passage and the surrounding areas. There are no words."
