The hidden Edinburgh gin distillery where you can learn how to make the perfect cocktail

In the heart of Leith, close to the historic docks where Edinburgh's connection to the gin trade first began, you'll find an exciting new distillery where you can learn all about this exciting spirit.

Lind & Lime Distillery, which recently opened on Coburg Street, has an unassuming exterior but inside you'll find a beautiful interior tasting space and bar where you can not only taste their incredibly popular gin but also perfect your cocktail-making skills.

Named for James Lind, the famous Edinburgh-born Navy surgeon who proved that lime could be used to treat scurvy, this top-selling gin is the brainchild of co-founders Paddy Fletcher and Ian Stirling, who are also the entrepreneurs behind the pioneering vertical Port of Leith whisky distillery which is due to be built close by.

This former warehouse has been transformed into an incredible tasting space (complete with bar and Lind & Lime chandeliers), production space and shop where you can enjoy a tour with the team.

The ideal gift for any gin fans, these tours can be booked online in advance or at the distillery bottle shop. Priced at £25 pp guests get to enjoy a signature Gin & Tonic on arrival before learning all about how this classic London Dry style Gin is made.

Then using the capsule spinner on their bottling line, those taking the tour will be able to label and fill their very own 5cl bottle of Lind & Lime Gin, before heading to the bar space to learn how to make their very own gin cocktail, the Gimlet.

Running from Thursday to Sunday at 12 pm, 2 pm, 4 pm and 6 pm, the tours take around 75 minutes and you'll learn all about the history of this fascinating distillery and gin with its seven key botanicals.

Not only that, they have a shop jam-packed with products including the team's own sherry and port as well as clothing and books.
