The French chef Adam Reid to devise a new dish in tribute to Stalybridge

Adam Reid, the award-winning chef at The French at the Midland Hotel, is devising a new dish in tribute to his hometown of Stalybridge. The dish is to celebrate the Tameside town being named Greater Manchester Town of Culture.

It’s intended to capture the community, culture and history of Stalybridge, so the chef is asking for help from residents to pull it all together, dubbing the challenge ‘Born and Bread’. He’ll work with Tameside Local Studies, Portland Basin Museum, church groups, food and drink businesses, local food banks and various community groups in the area to come up with ideas too.

Steven Dexter from LOCAL, which is leading the project, said: “To help with Adam’s research into what the dish might be, we are reaching out to communities in and around the town to ask for their help and to co-design this dish together. Maybe it’s your favourite childhood meal, something that can only be made locally at a certain time of year, or a taste that triggers your memory of Stalybridge. Whatever it might be, we want to hear your thoughts!

“Your contributions can be emailed, posted or brought into the Stalybridge library by August 15, giving us time to collate the research and let Adam start experimenting in the kitchen! Your thoughts and submissions could eventually feature in a new recipe book, which tells the story of Adam’s journey and celebrates the food heritage and future culinary excellence of the town.”

Locals are being asked to cast their minds back to recipes from parents and grandparents, asked to write in about which foods are produced locally, what’s unique about Stalybridge and how they might complete the task given the cost of living crisis. Reid arrived at The French in 2013, taking over as head chef from L’Enclume’s Simon Rogan. He became the restaurant’s chef-patron in 2016.
