What's taken into account when judging a hygiene rating?
- How hygienically the food is handled - how it is prepared, cooked, re-heated, cooled and stored
- The condition of the building - cleanliness, layout, ventilation and other facilities
- How the business manages and records what it does to make sure food is safe
If a business is given a zero food hygiene rating, it means urgent improvement is necessary. If it's given a five rating, the highest, it means hygiene standards are "very good".
