Temporada's Dave Young to head up new restaurant at The Lobby

There is a rumble happening at Parliamentary Triangle - and it has nothing to do with politics.

The final venue of The Lawns of the Lobby has just been unveiled, with its doors set to open on August 20.

Led by beloved Canberra chef Dave Young, Ballyhoo is a new offering for the dining precinct and the next step in the hatted-chef's career following the closure of his restaurant Temporada earlier this year.

"Choosing a venue steeped in Canberra's history was a deliberate move towards doing something meaningful in hospitality," Young says.

"Ballyhoo's location in the National Triangle will attract a unique crowd on a national scale, providing an opportunity to truly stand out and be a part of the next chapter in Canberra history."

Ballyhoo will be open from daytime to nighttime, for those seeking an all-round good time, and embraces communal dining that's perfect for sharing.

Young's signature style is at the heart of the dishes, and aims to showcase high-quality produce and a vibrant flavours.

With a wood-fired grill and pizza oven bringing a smokiness to the menu, there will also be Mediterranean and South American influences to create a distinctive and punchy dining experience.

"Temporada was a great chapter, now I'm excited to create something equally exciting in this iconic space," Young said.

"I've got a clean slate to explore and experiment with new food concepts that aren't tied to people's expectations from me."

The Ballyhoo bar aims to be a celebration of both emerging talents and established icons in wine. Barossa Valley, Eden Valley, Margaret River and of course the Canberra wine region have been traversed to curate the wine list.

Aussie spirits will be at the forefront of the cocktail list with homegrown ingredients upping the dial on the "Australian-ness" of the drinks list.

Ballyhoo will be releasing limited seating prior to the official launch in September. The"first look" experience gives eager diners the exclusive opportunity to be among the first to dine, with a set menu curated by the chef. These will begin on August 20, with the restaurant open for dinner six days a week, for the first four weeks.

Located on King George Terrace in the heart of Parliamentary Triangle, Ballyhoo is neighboured by Japanese restaurant Koto and the outdoor garden bar, Rosa's, in The Lawns of The Lobby precinct.
