Robert Downey Jr.'s new book promotes climate-positive eating habits

Robert Downey Jr. looks happy.

In the world of Hollywood, Robert Downey Jr. is a household name known for his charismatic roles and undeniable talent. However, in addition to his acting prowess, Downey Jr. is also passionate about making a positive impact on the environment. His latest endeavor, a book called 'Cool Food: Erasing Your Carbon Footprint One Bite at a Time,' dives into the concept of eating in climate-positive ways.

In collaboration with coauthor Thomas Kostigen, Downey Jr. explores the importance of mindful eating and how he incorporates this mentality into his own home. As a father of three and a self-proclaimed flexitarian, he believes in practicing mindfulness and integrating it into his family's food choices.

The book shares quick and easy recipes that can make a big impact on the planet. Take the veggie burrito recipe, for example, which is a delightful combination of flavors and environmentally friendly ingredients. It's a dish that both Downey Jr. and Kostigen enjoy, with Kostigen even calling it his go-to make-at-home meal in London.

Mindful eating is the overarching theme of 'Cool Food,' as it emphasizes the transformational power of small actions, experiences, and informed choices. Downey Jr. believes that making more conscious decisions about our daily eating habits can have a significant impact on the world. By simply changing our approach to food, we can contribute to a better and healthier planet.

Now, let's dive into the recipe itself. Here's how you can make the mouthwatering veggie burrito at home:

Ingredients: - 1/4 cup uncooked brown rice - 1 cup shredded iceberg lettuce - 1 (8-oz.) can whole kernel corn, drained - 1 medium Roma tomato, chopped - 1 large scallion, thinly sliced - 1/4 cup finely chopped fresh cilantro - 1 red Fresno chile, thinly sliced - 1 tablespoon fresh lime juice (from 1 lime) - 3/4 teaspoon kosher salt - 4 (10-in.) whole-wheat flour tortillas - 1 cup refried beans (from 1 [16-oz.] can) - 1 medium avocado, sliced - 4 oz. shredded vegan Cheddar cheese (about 1 cup)

Instructions: 1. Bring a medium saucepan of water to a boil over high heat. Add brown rice, then reduce the heat to medium. Cook, stirring occasionally, until the rice becomes tender, which usually takes around 20 minutes. Drain the rice and cool it under cold water.

2. In a medium bowl, stir together the lettuce, corn, tomato, scallion, cilantro, chile, lime juice, and salt. Set this mixture aside.

3. Lay the tortillas flat on a work surface and spread each one with a quarter cup of refried beans, leaving a 1½-inch border. Sprinkle a quarter cup of cooked rice evenly over the beans, and then top it with avocado slices and the lettuce mixture. Finally, sprinkle each tortilla evenly with the shredded vegan Cheddar cheese.

4. Tightly roll each tortilla into a burrito, then cut in half to serve.

This recipe serves four people and requires an active time of approximately 20 minutes, with a total time of 40 minutes.

By embracing the principles of mindfulness and making informed decisions about our meals, we can contribute to a better future. 'Cool Food' reminds us that even small changes can have a significant impact, and Robert Downey Jr.'s love for the environment shines through in this book. So why not give this veggie burrito a try and take the first step towards erasing your carbon footprint one bite at a time?
