Revealed - the top food traders that are heading to Manchester’s newest food hall

A host of top food traders are heading to the city’s newest food hall. Exhibition is all set to open on the site of Manchester’s old Natural History Museum next month, in the stately St George’s House on Museum Street.

Joining the project for its opening will be Brazilian, Manchester-based chef Caroline Martins, who’s appeared on The Great British Menu and is behind the Sao Paulo project in Ancoats. She’ll be launching the Sao Paulo Bistro, working with the likes of Platt Fields Market Garden, Dormouse Chocolates, Northern Cure and The Flat Baker for her produce.

Her menu will be a fusion of British and Brazilian influence, and will feature hand-dived scallops with a creamy cassava sauce, and a Sao Paulo steak sandwich made with Lancashire ribeye and Garstang blue sauce. She said: “From the first time I heard about Exhibition, I knew it was going to be a special, one-of-a-kind venue.

“While Manchester is already an incredible culinary destination, Exhibition is set to level-up the dining options in the centre of the city and become a real hotspot for anyone looking for delicious food with plenty of high quality drinks options in a stunning setting. Exhibition will be hard to beat for fans of fine food in Manchester."

Joining Caroline will be the team behind Osma in Prestwich, who will be launching their own concession. They’ll be concentrating on the Scandinavian-influenced menu that has seen their North Manchester bistro feature in the Michelin Guide.

On the menu will be Avruga caviar pots with toasted brioche, a sashimi plate with caper and shallot sauce, whole lobster with herb butter or a dish of roasted and pickled beetroots with raspberry and rose.

Meanwhile, Ramsbottom-meets-Basque Country restaurant Baratxuri will be joining the fray too, after similar forays at Escape To Freight Island and Kampus. On their menu will be bone-in rib steaks for sharing, as well as smaller snack dishes like marinated anchovies and plates of Spanish jamon.

Joe Botham, owner of Baratxuri, added: “We’re so excited to be involved with Exhibition. This venue is shaping up to be a ‘must visit’ and we are humbled and extremely proud to be cooking alongside such incredible kitchens. I honestly believe that Exhibition will rival the great market kitchens of Bilbao and Madrid and bring to Manchester a proper grown-up, casual yet really high quality dining experience.”

The venue will seat 400 people, and feature live music and DJs in the evenings, as well as food, while the bar will feature drinks from the likes of local heroes Cloudwater, Pomona Island and Sureshot. The project is being launched by the people behind Haunt on Peter Street, and is set to open in November.
