Quarantine Cocktail Club: Missionary's Downfall, from Laki Kane

Not every weekend could be glorious, and this one looks grey and damp for the most part.

That's no reason for your drink to be – if anything, go the opposite way. This is a tropical mix, proper sunshine stuff, and with a hefty swig of rum in it, it shouldn't take more than a couple to bring on that woozy feeling of having been out in the sun all day.

It comes from Timmy Fizon, who manages the bar at Islington's Laki Kane. Sat on Upper Street, they bill themselves as a "tropical escape", which is about spot on. It's a fun bar, serving Tiki drinks – when lockdown is lifted, this is one to come by for a laugh; it's not far from Homeboy, either, so there's probably a bar crawl waiting to happen.

Missionary's Downfall

Serves: 1

Ingredients

  • 50ml white rum (Fizon's pick is Copalli, which is unlikely to be in the local supermarket, but can be ordered here. Otherwise, any old white rum should do it.)
  • 20ml pineapple juice
  • 15ml lime juice
  • 15ml peach liqueur
  • 10ml Re’al agave nectar
  • 10 mint leafs
  • 10g of fresh pineapple

Method

  • Add everything into a blender without ice, and then blend.
  • Fine strain the mix into a glass. Now fill up the blender with crushed ice.
  • Pour the mix back into the blender, over the ice, and flash blend it all.
  • Serve into a sling glass, or any tall glass, and garnish with a mint sprig. ​
