Popular Manchester restaurant transforms into winter wonderland inspired by the Northern Lights

Will it snow this Christmas? The question on everyone’s lips when it gets to this time of year.

While a sweeping of snow has been forecast for Manchester this year, it may land earlier than expected at one city centre restaurant. This winter, a snowfall will dust contemporary Chinese restaurant Tattu in Spinningfields as part of an ‘immersive’ winter dining experience.

The restaurant’s signature cherry blossom with shimmer and sparkle, while projections of the arctic sky will be beamed onto the walls as parts of ‘The Great Snow’ experience curated by the venue. Naturally, a winter-themed menu and festive cocktails will be on offer too.

Inspired by the Chinese proverb ‘a fall of snow gives promise to a fruitful year’, the restaurant will be transformed into an enchanting winter scene, designed to transport diners to China's northernmost point, Mohe, known as China’s ‘Arctic town’. A shimmering layer of snow will coat the restaurant, the trees will turn icy blue and light murals and projections will reflect a display of the Northern Lights across the spaces.

The winter spirit will be taken up a level with the specially curated limited-edition Aurora Borealis cocktails and sparkling snow-capped desserts. Taking centre stage, the Aurora, blending Grey Goose vodka, white chocolate and sparkling cherry, has been created to reflect a luminous night’s sky.

The restaurant’s sharing menu autumn-winter menu meanwhile, features a number of standout winter warmers. Highlights include crispy shredded beef fillet, Shanghai black cod, seven spiced seared tuna, and a Tattu classic, the wok-fired angry bird - a signature chicken dish served with sesame honey soy and roast chilli peppers.

After snow comes the ice, and the same is true here. Tattu’s desserts with an icy twist include the Frozen Cherry Blossom, a dish creatively reimagined to reflect the Great Snow.

Topped with icy blue candyfloss and balanced on a delicate chocolate trunk, the dessert is grounded in a light chocolate mousse and is presented on a bed of dried ice which cascades over the table. Elsewhere, and available exclusively during the winter period, the limited edition Mount Heng Flambe is an indulgent baked Alaska with Maraschino Cherry, Hazelnuts, Coconut and Meringue beautifully formed to resemble China’s famous Mount Heng.

Looking slightly further ahead, Tattu’s New Year’s Eve lunch and dinner menus have also been announced. While dishes may vary slightly depending on location, guests can expect dishes including aromatic duck pancakes. Thai-style crispy monkfish and desserts such as chocolate dragon egg - filled with coconut, passion fruit and dragon egg.
