Perfectly roasted gin and orange carrots

Carrots are the unsung heroes of winter vegetables, boasting nutrient-rich goodness and a sweet flavour that can be elevated with just a few ingredients – as shown in this simple roasted carrots recipe. Here, sweet and savoury are effortlessly balanced with orange wedges, butter, honey and gin, creating a satisfying side dish that almost rivals the main course. Preheat oven to 220°C fan-forced. Place the orange and carrots on a large baking tray. Scatter over butter, drizzle with gin, honey, garlic and chilli. Add the bay leaves and season with salt and pepper.

Roast for 30 minutes or until the carrots are tender and sticky, turning occasionally.

These carrots are the perfect side for a roast dinner, or can be served at room temperature with rocket leaves.
