It's a very happy Pancake Day and no doubt many of you have promised to bake up the ultimate stack for your family and friends this evening.
You may already consider yourself a master or perhaps you've been put in charge of producing the perfect pancakes for the very first time.
Either way, we're sure one or two pointers would be more than welcome.
That's why one of our intrepid reporters was sent out to sample some of the city's best pancakes - and to find out the secret of why they're just so good.
The good people at Mesa - undoubtedly one of the city's hottest brunch spots - invited us in to their Dennistoun home this afternoon to teach us how to make the ideal stack - and here's what we found.
Unsurprisingly, it's all about the mix.
Giving an insight into why people keep coming back to Mesa for more, co-owner Andrea Bartolini talked us through just what makes their pancakes so flipping good.
Teasing the recipe, without giving away the cafe's secrets, he said: “It’s a buttermilk based recipe - lots of eggs, buttermilk and baking powder, plain flour, natural yoghurt, sugar and a little bit of salt. The reaction between the buttermilk and the baking powder makes them fluffy, but not thick.
“They’re big, but they’re not heavy. They’re quite light in texture and in weight. But it’s still a substantial meal!.
“If you steam them, they cook quicker obviously because they’re quite thick.
“The good thing about this recipe is it not’s all very sweet, so it’s versatile for a savoury pancake or a sweet one."
Alongside Mesa's stack staple - they always have a permanent menu fixture of a pancake with maple syrup, blueberries, bacon and toasted pecans - they also have a regularly rotated second option, which at the moment is the delicious-sounding combination of orange, mascarpone, chocolate ganache and granola.
But if you haven't yet made it down to Duke Street to swing by Mesa (why haven't you?), you'll also find an eclectic selection of brilliant brunch dishes, with many taking inspiration from the Middle East and Mediterranean, alongside local breakfast picks, featuring Scottish bacon and black pudding.
What's more, they're famed for their sandwiches too, if the pancakes and myriad of mouthwatering brunch dishes weren't enough.
And all their magnificent meals are made from scratch, with baked goods brought in from just across the road, courtesy of the much-loved Sweet Jane Bakery.
