Michelin-starred chef says we've been cooking sausages all wrong

If you think you've got your sausage-cooking skills down to a tee, then you'd be wrong - apparently.

Jeff Baker, who has prepared food for the Queen, previously told how we were all cooking bacon wrong.

And now he has revealed how to perfectly prepare your sausages in five easy-to-follow steps.

With more than three decades of experience working in a professional kitchen as an award-winning Michelin-starred chef, Jeff knows his stuff, says the Daily Star, so take note.

He's even shared some of the most common errors home cooks make - and pricking the sausages is a big no-no.

For the perfect sausages, Jeff recommends cooking them as follows:

1. Remove the sausages from the fridge 20 minutes before cooking. This helps the sausage to cook evenly and prevents the skin from splitting when it hits the heat.

2. Pop them into a heavy-based non-stick frying pan and place them on low to medium heat.

3. Add a teaspoon of duck or goose fat to the pan and swirl it around until the base is fully coated. Then tip away any excess fat.

4. Place the sausages in the pan, making sure they’re not touching each other and keep on constant heat. Turning them regularly ensures the bangers get a rich golden colour. Jeff recommends 10 to 12 minutes for a traditional thick sausage.

5. Rest the sausages before serving. Once the sausages are cooked, they will be firm to touch, with an internal temperature of 70°C.

The secret now is to let the sausages rest for a few minutes, just like you would a steak allowing the meat to relax, giving you a tender, juicy sausage.

Common mistakes

Jeff also shared some of the most common mistakes people make when cooking sausages.

The first is pricking the skins when cooking the sausages. This causes the juice to run out, meaning you'll be left with a dry, tasteless sausage.

He also urges people never to deep fry their sausages as this can also dry them out.

And finally, baking your sausages - although this may seem like the healthiest option - doing so prevents the exterior from crisping up.
