Nottingham Michelin Star chef Alex Bond has launched a new website and provided an update on his latest restaurant, Mollis, which is set to open in the new year in the city centre. Mollis, in Derby Road, is set to combine Alex's love of hip-hop, fried chicken and ice cream.
The restaurant is located next door to his first food venture, Alchemilla, which will be a completely new dining experience from his new offering. In an announcement on Facebook, Alex wrote that the Mollis diary will be open for bookings from Friday, December 9, with the official opening on Saturday, December 17.
Alex also teased a photo of the inside of the building on Facebook which shows a heavily graffitied room fitting with the hip-hop theme. On the website, the food is described as 'the best-fried chicken you'll ever have'. There's also mention of 'carefully curated' cocktails from 'world-class bartender' Darren Warren.

The booking system opened at 12pm although customers will be asked to pay a deposit of £15 to hold the reservation. The website is also selling Mollis merchandise such as T-shirts with free delivery for orders over £100. The T-shirts are a design collaboration between Mollis and some of Nottingham's best graffiti artists including Boaster, Talia and Kid30.
A statement from Alex Bond on the Mollis website revealed: "On the menu, you can expect lots of koji, fermenting and flavours you've never dreamed of. The whole point of Mollis is to elevate the casual dining scene in Nottingham. I also wanted to use it as a blank canvas to showcase the talent of local street artists with the likes of Kid30 and Boaster."
The restaurant raised funds to convert the former One More Chinese restaurant which has a Derby Road facing frontage along with a basement. Alex launched a crowdfunding campaign which smashed the target of £100,000 after the building works ran into difficulties and went over budget.
The new restaurant will be open from December 19 to Friday, December 23, before it will temporarily close over Christmas. It will reopen on Wednesday, January 11.
