As he explained when he shared his French-style scrambled eggs recipe with MasterClass, chef Thomas Keller recommends you blend your eggs after whisking them.
First and foremost, you might be wondering why he whisks his eggs rather than beating them.
The recipe clarifies, 'while it is perfectly fine to beat the eggs using a fork, Chef Keller prefers using a whisk'. You might also question how to blend your eggs, but again you're in luck. He instructs: "For further refinement, blend the eggs using a blender or immersion blender and pass the blended eggs through a chinois."
What's more, it sounds like the tip works a treat even if you don't have access to a chinois – or a similar fine mesh strainer. One fan put the trick to the test, using what appears to be a regular strainer, and enjoyed brilliant results.
Recommending Chef Keller's work on TikTok, fellow foodie Maxine Sharf, who posts as @maxiskitchen, shared a demonstration.
"I decided I'd like to make scrambled eggs like a Michelin star chef so I studied Thomas Keller's method and gave it a go," she explained.
Maxine continued: "He has you strain the eggs to break up the proteins and then cook on very low heat with some crème fraîche added at the end.
"I'm telling you these were so custardy and incredible."
Delighted by her video, which has racked up over 4.8 million views, several fans tested out the tip themselves.
