Meet the East Lothian duo turning vintage vans into a successful food business

With street food becoming ever more popular, an enterprising duo from East Lothian have found a novel way to stand out from the crowd.

North Berwick-based entrepreneurs Kurt Edwards and Laura Mouat, both 42, have breathed new life into a pair of vintage vans transforming them into a thriving business.

The pair hit upon the idea after Laura spent time living in the US, where she came across Texas' burgeoning street food scene in Austin and spotted some of the producers there.

"Laura had always dreamed of having her own food van business," explained Kurt. "And we always loved the idea of catering on the road."

With Kurt’s experience in catering, a chef of 25 years, and Laura's enthusiasm for her dream, the pair soon cooked up their business, and Wee Green Events was born.

Laura explained: "Our first purchase was a not-so-mobile food truck (an old Bedford army ambulance) and we soon realised cute, vintage vans were the way forward and now we have Margo and Rita, our gorgeous French girls."

The pair sourced their trucks on a website that specialises in vintage food vehicles, and now they own Rita, a Peugeot J7 and Margo, a Citroen H Van.

Though the Citroen was ready to go, Kurt and Laura had to spend time fixing Rita to get her back on the road.

Offering two very different options, Margo serves up gourmet smash burgers, tacos, loaded hot dogs, coffee and cakes, while Rita is a wood-fired pizza van that serves Neapolitan pizza and delicious-sounding wood-fired mac and cheese.

The duo make everything from the pizza dough to the smoked pork tacos and homemade pastrami themselves and say they love to hand-stretch their pizzas and experiment with unique twists on toppings and flavours.

"We believe in using local suppliers," added Kurt. "And working with our customers to make sure they get a great experience. And we now offer a full BBQ service from our new BBQ trailer."

The business has really taken off with the firm now working with a variety of venues throughout Scotland providing catering for a whole range of events including weddings, corporate, film productions and festivals.

And food fans will be able to spot them out and about in Edinburgh and the Lothians this year, as they have a busy schedule of events lined up.

"We will be featuring at Fringe by the Sea this year," said Laura. "As well as appearing at the Gullane Food and Drink Festival, the East Fortune Flight Museum, Newhailes Estate events and Kilduff Farm Spring Fair and Pumpkin Patch in the Autumn.

"Look out for our upcoming van pop-ups at The Mart in East Linton."
