The team behind Meat:Stack will open a fried chicken takeaway to run alongside its recently launched poultry pop-up at the Dog and Parrot.
FED's Fried Chicken is set to open in the former Meat:Stack counter in the Grainger Market, Newcastle on Friday September 11.
Meat:Stack recently opened a full-time, all-day burger restaurant in the Bigg Market, so founders Allan Hyslop, Tom Westman and Charlie Mair decided to launch a new concept at both Meat:Stack's former Grainger Market stall and its kitchen in the Dog and Parrot, rather than having three burger joints in the city, as was the case before they launched FED's in the Dog and Parrot a month ago.
Allan told ChronicleLive they spotted a gap in the market for fried chicken in Newcastle.
He said: "With the Meat:Stack restaurant taking off, we didn't see the point in spreading ourselves too thin; we had other ideas and things we wanted to try. It's something we were planning, we always had chicken sandwiches on in Meat:Stack.
"We just thought there was nowhere amazing in town doing fried chicken, so, go for it."
Charlie explained the chicken comes from a high-welfare farm in Yorkshire. FED's joint the chicken and marinade it in a sweet tea brine, before seasoning with flower and a 17 herb and spices blend. It is then deep-fried to achieve a crispy finish.
Customers can order pieces of fried chicken on the bone, wings, boneless tenders, or fried chicken 'rolls', AKA sandwiches.
With the pieces of chicken, there are options to get them 'mopped' in sauce, ranging from gentle BBQ varieties to hot and - for the brave - very hot.
The rolls are filled with two chicken tenders, with five varieties of chicken sandwich to choose from, along with a vegetarian halloumi sandwich and a vegan cauliflower steak roll.
The sandwich menu options include standard fried chicken roll (lettuce, tomatoes and pink onions); a salt and pepper chicken roll (with fried peppers and onions, cream cheese, a hash brown and char siu ) and a tower sandwich which packs in a hash brown, cheese and crispy onion.
Customers can choose to add sides, including seasoned fries, homemade gravy, slaw and beans. For £3, customers can add a side and a drink.
FED'S is due to open in the Grainger Market on Friday, November 11. It is already open upstairs in the Dog and Parrot, Clayton Street West, Newcastle.
