Luxury Edinburgh Italian to launch plush new cocktail bar with 'iconic' Negronis

A swish Edinburgh restaurant have announced they will be launching a brand new cocktail bar in the heart of the New Town.

Opening in the summer of 2021, Rico's Ristorante on Castle Street have proved a popular spot for for a more luxurious version of Italian dining, and have now embarked on their latest venture.

Sharing the plans, the restaurant confirmed they would be opening the new cocktail and 'cicchetti' bar, Ciao, inside their current premises on North Castle Street in November 2022.

Offering a range of drinks and small plates, the bar have also claimed they will be serving up a full menu of 'iconic' Negronis, with the drink seeing a sudden surge in popularity.

Set to have a more informal dining style than the adjoining restaurant, the "charming and intimate" bar will be open five days a week, from Tuesday to Saturday to begin.

A lunch and light bite menu will also be offered, with two courses for £15 and three courses for £20.

Ciao is part of 27-year-old restaurant entrepreneur Stefano Pieraccini's, Rocca Group, which includes Rico's Ristorante, The Broughton on Edinburgh's Broughton Street, and The Seafood Ristorante in St Andrews. All three of Rocca's restaurants are included in this year's Michelin Guide.

Stefano Pieraccini said: "The bar has always been a lovely space, but it hasn't been used to its full potential since Rico's opened last year. With the decision and investment to give the bar area its own identity (Ciao), I believe it will add value to the space and offer something unique to the city."
