
One of Britain’s most famous department stores, Liberty, is to open a new restaurant as it marks its 150th anniversary.
Seventy Five takes its name from the year Liberty was founded and will specialise in modern British cuisine, from Hampshire pork to Buckinghamshire honey.
The restaurant will be located on the second floor and comes in partnership with Goose + Berry, an upscale catering group based in Marlow. Seventy Five will be the brand’s first standalone restaurant, making use of its own honey and homegrown herbs.
Leading the kitchen team will be Joe Holness, who has worked at the likes of Fera at Claridge’s and East London hotspot Da Terra, and who has created a sharing-style menu that celebrates “fresh, seasonal ingredients”.
The Standard has been shown an early menu that includes goat’s cheese and almond croquettes, torched mackerel with pickled carrots, Swaledale chicken with salsify and thyme, and a pork chop served with salsa verde.
Seventy Five will also serve brunch all day, an arts and crafts-inspired afternoon tea devised by head pastry chef Lizzie Ross, and cocktails based around Liberty’s own collection of fragrances.
The interiors, meanwhile, will include 19th century artwork, Chinoiserie motifs, and Persian garden illustrations. There will also be an artists’ residency series.
Sir Quentin Blake, arguably best-known for illustrating Roald Dahl’s books, will be the first in situ and many of his works will feature on the walls.
