Chef Tony Singh MBE will be in the "capital of the Highlands" this weekend, where he will serve up food to people in Inverness for charity.
On Friday and Saturday, the acclaimed cook will "bring people together over a shared love of food and drink". He will take over the Highland Food and Drink Trail's pop-up unit in the recently refurbished Victorian Market food hall, where he will be rustling up his Signature Dish—a fusion of "delicious Indian and Highland Ingredients"—and pairing it with local whisky brand Cù Bòcan Single Malt.
Guests are welcome to watch Tony in action, and are encouraged to "bring their appetites and their wallets", with all food and drink sales from his pop-up being donated to Maggie's Highlands. The charity provides free practical, emotional, and social support for people with cancer and their family and friends across the whole of the Highlands.
Cù Bòcan, produced at nearby Tomatin distillery, will be available in the form of drams and whisky cocktails, while guests can also purchase alcohol from the Moonshine wine, beer, and spirits shop in the Victorian Market. The newly renovated Market Hall has been described as a "vibrant, central social area where families and groups can pick up their choice of food, sit back and soak up the atmosphere".
Tony will be serving food from around 12pm on Friday until his dish runs out, so visitors are encouraged to get there early.
The following day, the chef will then visit the Highland Food and Drink Trail's dedicated street food zone next to the River Ness and Inverness Cathedral, which was set up in 2022 and aims to showcase the best of local produce. He will also be at the city's Black Isle Brewery Bar from around 2pm to 6pm when he will create his own pizza, with all proceeds again going to Maggie's Highlands.
For those looking for a more bespoke experience, two private interactive sessions with both Tony and Cù Bòcan Blender and Global Brands Ambassador Scott Adamson will take place on the Friday. Spaces for these will be allocated on a first come first serve basis for a nominal donation to Maggie's, with the first session taking place at approximately 10.30am and the second starting around 3.30pm.
Tony commented: "These events are about hospitality, so it’s bringing people in and sharing over food and drink, wherever you are in the world, people can relate to food and drink. It’s for a serious cause but you can have fun doing it."
