A new restaurant from posh kebab sensation Le Bab is set to serve the group’s most opulent offering yet – a foie gras “kebabito”.
Kebab Queen, a 10-seater counter venue connected to Le Bab's Covent Garden sister restaurant Maison Bab, will serve the miniature wrap as a starter on a seven-course tasting menu. The £60-a-head menu has been devised by group founder Manu Canales, formerly sous chef at Michel Roux Jr’s Le Gavroche.
Inside the a small buttermilk flatbread, two bites of barbecued, higher welfare foie gras will be served topped with a potato confited in cured duck fat and cardamom, Gran Marnier-soaked muscat raisins, pickled roscoff onions and medjool date puree.
The dish will then be followed by other upmarket takes on the kebab and Middle Eastern flavours, including a doner risotto made with lamb jus and shavings of lamb tongue, and a monkfish shish kebab served with monkfish liver and chicken skin, served in a charred cabbage leaf.
Diners will then move onto a main course of rum-aged spit roasted Fesenjan duck, which has been inspired by the traditional Iranian stew and comes with a crust of crisp Persian rice. For dessert, Canales will offer “Got Milk?”, a dish of sticky milk buns filled with caramelised cream and topped with creme fraiche sorbet.
In a homage to British kebab shops, all dishes will be served over the counter from an open kitchen with a wood-fired grill, and plated onto a bespoke heated Dekton countertop.
“Kebab Queen is the pinnacle of our project,” said Canales. “The piquancy, umami and smokiness of the kebab really lend themselves to reinterpretation. We’re creatively pairing Middle Eastern flavours with meticulous and classic technique, but we want you to relax and get stuck in; it’s about combining the intense flavours of high end dining with the communal, elbow-to-elbow fun of the kebab shop.”
Kebab Queen is set to open on Mercer Walk next month, six months after the group opened its casual restaurant Maison Bab.
