Even though school dinners could be questionable at times, school cake I’m sure was and still is a nostalgic guilty pleasure.
Everyone in the UK remembers the retro school cake and custard that was served by the dinner ladies. Oh where the days when you walked into the school canteen at dinner time to see it was being served that day.
If you aren’t familiar with school cake, it is a light coloured soft and fluffy sponge topped with white icing and lots of coloured hundreds and thousands, you can’t forget the sprinkles.

After having a look at different school cake recipes online, I kept asking myself the question ‘why have I never made this before?’ as it is such an easy recipe to make. I decided to go for the recipe from ohla living simply because it had over 34 thousand five star reviews.
Ingredients:
Sponge cake -
300g butter
300g caster sugar
5 large eggs
95ml milk
1 tsp vanilla essence
Icing:
400g icing sugar
8 tbsp milk
50g sprinkles
You do not need to use as much milk as stated in the above recipe unless you want a kitchen counter filled with runny icing that glides off the cake. I quickly made some more (thicker) icing with half of the milk stated in the recipe, and it was the perfect consistency.
Will the school cake be how I remember it from school or did the dinner ladies have magical powers when making this cake?

While I was making the cake, it hit me how gloriously calorific this cake was and it surprised me that Jamie Oliver didn’t abolish this from school menus like he did with beloved turkey twizzlers.
Before I tried the cake, it certainly looked just how I remembered it. The beautiful, bright colours from the hundreds and thousands sprinkled all over it brought back so many happy memories from school times.
I cut myself a decent sized piece of school cake and was slightly apprehensive to try it as I didn’t want to ruin the taste I had always remembered. It’s safe to say, it did not disappoint. The fluffiness of the sponge with the sweetness of the icing and sprinkles was a match made in cake heaven. Once I’d eaten one bite, that was it. I couldn’t stop.
