Husband and wife duo open new Enniskillen cafe

Cheese toasties and good coffee are the order of the day at a new family run cafe in Enniskillen.

The Toastery is the brainchild of Sophie and Rossa Mac Aindriu, a husband and wife due with more than 14 years experience in the hospitality industry.

Enniskillen native Sophie was previously general manager of the Westville Hotel, and herself and hubby Rossa are hoping to bring a taste of the city to the Co Fermanagh town.

“We went away travelling to Asia, Australia and New Zealand and then and then came back and had always wanted to open our own cafe,” Sophie told MyFermanagh.

“We decided just to take the plunge so we opened on Church Street last Monday and it has been flat out ever since.

“We want it to have a wee bit of a city vibe about it with good music and quality local products.

“Everything is made in house and there is nothing bought in so I think that sets us apart.”

Sophie added it was a family affair getting the cafe ready for opening, with everyone putting the shoulder to the wheel to get the doors open.

“The whole fit out was done by family, my dad made the counter front and we kept everything local as much as possible.

“There is a great sense of pride now, before we moved into this premises there was no real electricity, it was a complete empty shell that we had to build up from scratch.

“Considering it was ourselves and family that put it together, there is a sense of pride that we didn’t get a big contractor to come in and do the job for us.”

The pair would love to expand their new business out into more locations when the time is right, Sophie added.

“We’d like to open up a couple more Toasteries if it keeps going the way it is.

“This isn’t just a one stop shop for us, we would love to be able to expand as much as we can.”
