February 1 sees the dawn of Chinese New Year and the start of the Year of the Tiger.

Chinese New Year celebrations last for 16 days, starting on Chinese New Year Eve and ending with the Lantern Festival.

Traditionally food plays an important part in Chinese New Year, with many dishes having special significance in the traditions of the festival.

A whole steamed fish is often considered a lucky centrepiece of a table, with the head pointing towards the occasion's most honoured guests.

Spring rolls and dumplings are both considered symbolic of wealth and are a traditionally lucky foods. The colour of spring rolls is meant to represent gold, while dumplings represent the shape of ancient Chinese money.

In some households a coin might be hidden inside one dumpling with whoever gets it in their portion thought to be guaranteed good fortune for the new year.

Extra long noodles to symbolise long life are also eaten as part of the feast, often cooked with green vegetables.
