A GLASGOW-BASED steakhouse has announced the opening of a branch in Scotland's capital.
With a selection of meats, fish and appetisers the Spanish Butcher says it has "redefined the concept of a steak house across Scotland for almost 15 years".
The concept has attracted stars such as Will Ferrell, Eddie Izzard and Tobey Maguire, as well as home heroes Gerard Butler and Paolo Nutini.
Run by independent Scottish restaurant group RUSK & RUSK, the restaurant will feature Spanish and Mediterranean-inspired flavours with top Scottish produce.
This includes its renowned dry-aged prime rib of beef (below) or porterhouse cut which comes from Galicia in north-western Spain.
Whole roasted Shetland monkfish, grilled octopus, the finest Scotch steak and whole roasted suckling pig are among the other delicacies on the a la carte menu.
Paired with these mains is a selection of appetisers and sides including Gordal olives, Padrón peppers and Manchego truffle fries (below).
James and Louise Rusk, co-founders of RUSK & RUSK, said: “We have always been champions of really great ingredients grown here in Scotland, and likewise, food is very much central to Spanish culture.
“The depth of flavour our customers will experience at North Castle Street when these two culinary landscapes combine will be extraordinary.”
Paired with this menu will be a stylish décor inspired by New York’s neighbourhood dining scene and the loft-style vibes of the city.
The Spanish Butcher in Edinburgh aims to be modern, hip and hospitable with a lively, seductive atmosphere and on-point service.
The co-founders added: "Restaurants, for us, are about evoking emotion and creating memories.
“People not only expect great food and service, but a relaxed, atmospheric space, and we hope our customers love the stylish neighbourhood vibe of The Spanish Butcher in Edinburgh.”
The Edinburgh store will open its doors on North Castle Street in spring 2024.
