First look inside Edinburgh's new Lind and Lime Gin distillery at the Shore

The brand new Edinburgh Lind and Lime Gin distillery has opened in the heart of Leith located at the Shore.

The large warehouse turned distillery opened on May 28 with a stunning launch party to welcome guests to Leith's latest hotspot.

The energy efficient distillery in the historic Port of Leith launched this week expecting to welcome 10,000 visitors a year to experience their tasting, bottle filling and cocktail making tour.

The new industrial HQ of their benchmark London dry gin will expand bottling capacity to upwards of 1,000,000 bottes a year.

Forged from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith, Lind & Lime Gin is distilled with 100% green electricity, produced with 100% organic ingredients and packaged with 100% plastic free materials.

At their new home on Coburg Street, visitors can learn how the distillery was inspired by the unsung hero of the Scottish enlightenment, Dr James Lind.

Working for the Royal Navy, the Edinburgh educated surgeon conducted one of the first recorded clinical trials.

Observing that citrus fruit prevented scurvy among the sailors on his vessel, he contributed to a remarkable health improvement in the Royal Navy by the end of the 18th century, celebrated by this eponymous gin.

Lifelong friends and co-founders of the distillery Ian Stirling and Paddy Fletcher, are also behind the forthcoming £12 million Port Of Leith whisky distillery.

At this purpose-built vertical distillery, they are undertaking a new approach to Scotch Whisky which they’re calling “New Scotch”.

They hope the Port of Leith Distillery will become another landmark visitor attraction for Edinburgh on its completion in late 2022.

Ian Stirling, Co-Founder of Lind & Lime, said: “Lind & Lime’s journey began in a small industrial unit on Tower Street in 2018 with the sole aim of creating a benchmark classic style of gin.

Since launching, our feet have barely touched the ground and we have struggled to meet demand.

We now export to 24 international markets and we are incredibly excited to be expanding distribution to the USA later this year

“We’d been searching for a larger facility for some time, and we were incredibly fortunate to secure the former Sports Warehouse on Coburg Street.

"Keeping production and bottling in Leith was incredibly important to us.”

“Following a £600,000 fit-out, which began in October 2021, we’ve invested carefully to make this building as environmentally efficient as possible, and we will continue to power production with 100 per cent green electricity.”

The 90 minute tours will run weekly from Thursday to Saturday. Early booking is recommended. Tickets are priced at £25 and only available for over 18s.
