First look at chef Andrew Sheridan's new 'fully immersive' restaurant '8'

Liverpool's 'first' chef's table experience has officially opened after moving from Birmingham.

Restaurant '8' is a three AA-Rosette-holding restaurant that has moved to Cook Street after more than two years in Birmingham. A trip to the exclusive restaurant is described as 'fully immersive' where all diners sit down at the same time for a 12 course tasting menu.

Chef Andrew Sheridan was born in Liverpool but grew up in North Wales. After working at the new Michael Caines' ABode hotel restaurant in 2010, he was awarded North West Chef of The Year in 2011.

Now, he's aiming for Liverpool's first Michelin star, with a menu consisting of only the finest ingredients. Those visiting '8' can expect dishes including Wagyu beef and N25 caviar, all served on specially crafted tableware.

Andrew Sheridan already has 3 AA-Rosettes, and wanted to bring the concept of '8' back to his roots in Liverpool. The restaurant opened on Wednesday last week and has had its first opening weekend.

Speaking to the ECHO, chef Andrew Sheridan said: "We've had an unbelievable opening weekend. The feedback from diners has been incredible - people have been truly blown away by the 8 experience."

"It's brilliant to be able to finally bring a unique dining experience to my home city and we can't wait to welcome more customers to 8."

The restaurant has already received glowing reviews from visitors since opening last week. As seen on TripAdvisor, one review read:

"We loved everything about the night, the food and the venue. It creates an excitement by not knowing the next course until it is being prepared in front of you. We knew we were in safe hands and every course was fantastic. A special thanks for making us feel so welcome. The service was professional but more importantly, very warm and friendly."

The tasting menu is priced at £110 with an optional drinks pairing for £70. The menu includes:

  • Mackerel - Gazpacho & Horseradish
  • Scallop - Brown Butter & Dashi
  • Welsh Lamb* - Rib & Broth
  • Cod - Caviar & Roe
  • Wagyu Beef* - Pickles & Truffle
  • Jasmine Rice - Cocunut & Lime
  • Manjari Chocolate - Salted Caramel & Pecan Praline
  • Grana Padano Custard - Apple Caramel
  • Sweet Treats - For After Dinner
