An award-winning premium craft bakery chain with roots in London has announced plans to open its first north west store early next year.
GAIL’s bakery, which sells a wide selection of fresh, handmade chef-quality bread, pastries and cakes, has revealed it will open in Wilmslow in 2023 following success in London, Oxford and Brighton.
The bakery and café chain’s philosophy is to ‘make good food that people love’ using the best seasonal ingredients from local suppliers. Its menu features the likes of mini avocado and chickpea buns, parmesan chicken sandwiches, spinach rolls, blueberry and custard brioches, and Madeleines.

In 2022, GAIL’s was awarded fourteen Great Taste Awards by the Guild of Fine Foods. The Wilmslow bakery will be GAIL’s first in the north west, with further locations in the North West set to be announced next year.
As part of its mission statement, the venues will be built sustainably, with upcycling and restorations from existing bakeries when possible. The chain also supports local charities close to their venues. Last year, GAIL partnered with over 95 charities by donating surplus food to feed these communities.
Founded by Gail Mejia, the business started in the early 1990’s with wholesale baker The Bread Company, which caters to top restaurants and food businesses. The wholesaler opened their Manchester bakery in Openshaw back in 2017.
In 2003, Tom Molna joined the business to help grow GAIL’S organically into a high-street bakery. It now has around 100 stores, mostly in the London area, after opening its first store in Hampstead's High Street in 2005.
