Edinburgh to host popular street food pop-up Mac Love outside St James Quarter

One of Scotland's most unique Mac and Cheese businesses will be selling their famous cheesy dishes just outside one of Edinburgh's busiest shopping centre's.

Mac Love will soon be rolling up outside St James Quarter to bring their mouth-watering versions of one of the nations favourite cheesy dishes, hoping they can entice customers coming to and from the centre.

The company took to Instagram this week to post a series of teaser posts to get their fans excited, with one post just captioned: "Something's coming," followed by a picture of the word 'Quarter'.

The next post simply had the word 'James' and the caption: "Drum roll please." By this point. most had already guessed what the new exciting news was, but a third post with the word 'St' rounded of the trio of teasers.

The last post also included some more information about Mac Love's new location, saying that they will soon be open daily ay Little King Street, with existing and new additions to their menu.

They posted: "Ok enough with the teasers already! Mac Love is excited to announce that you will be able to find us open daily in the heart of Edinburgh at the bustling @stjamesquarter.

"Located on Little King Street, you’ll be able to grab all your favourite macaroni pots on the regular from our Mac Love street kitchen (with some new additions to the menu too).

"We can’t wait to get started!"

The team are popular for producing a different and unique take on the famous macaroni cheese dish, adding delicious toppings mixed in a tub of the cheesy pasta. Some of the existing favourites include 'Mexican Mac', 'Bacon Mac' and the simple, yet effective, 'Mac Love', which includes crispy onions and parmesan cheese on top.

The Mexican Mac includes tortilla chips, sour cream and chipotle sauce, amongst other additions, in what can only be described as a toss up between nachos and macaroni cheese. Who could say no to that?

The pop-up street food sensation also found themselves amongst finalists at the Scottish Street Food Awards in 2021, as well as appearing at festivals such as TRNSMT to provide hungry music-lovers with their popular creations.

The team, originally from Fife, have another pop-up food truck at Tayport Viewpoint on Saturday and Sunday's, as well as making appearances at private events and functions.
