Edinburgh couple open new vegan cafe to 'help teach locals how to cook'

A new vegan restaurant has opened in Edinburgh offering a colourful plant based menu.

Pulse PlantBased HomeCooking has opened up under St Johns on Lothian Road and are located at the garden terrace level with amazing views of Edinburgh Castle.

Not only do they serve food, there are plans for Pulse to offer cooking and kitchen skill classes that range from cooking methods to ingredient appreciation, to improvising with ‘leftover bits and pieces’.

The menu can regularly as they source local and seasonal ingredients from Scotland. Their aim to have as little waste as possible and cook with as little oil as they can.

On the website, the owners state: "We cook fantastic food that happens to be healthy … Adding the LEAST amount of oil without compromising the deliciousness of the dish is our rule of thumb.

"We developed quite a few dishes that are naturally oil-free. Having said that , our regular clients will also attest to the fact that the touch of good quality truffle oil completes our mushroom and chestnut pâté. We will prepare the food in no or very little oil."

Pulse HomeCooking was created by couple Ayshé and Mark who follow a plant based diet since 2013 and at the end of 2014, they created Pulse, served their first paying customer at the beginning of 2015 at Hampstead Community Centre in North London.

After their success in London, the couple who met in Wales in 1999, moved up to Edinburgh in 2021 and at the end of 2022, Pulse opened on the corner of Lothian Road.

Pulse is open Wednesday - Thursday 11am - 5pm. Friday - Saturday 11am - 8pm and on Sunday it's open 11am - 5pm.
