The founders of Battersea hotspot Ploussard (a favourite neighbourhood restaurant of Michel Roux) will launch a new burger brand in Brixton this month.
Matt Harris and Tommy Kempton, who are also behind the fried chicken concept Other Side Fried, are to convert their Atlantic Road chicken shop into Buster’s burger bar, switching from poultry to beef.
The site, under one of South London’s many railway arches, has undergone a revamp, mirroring the look at Ploussard with wood panelling and neutral tones.
As for the food, Harris and Kempton have kept things simple but upmarket. On the way is a menu of wagyu beef burgers (between £9 and £10, depending on add-ons), all cooked medium, in buttered potato rolls and served with classic French fries.
Only the sauces will change, with options moving from green peppercorn “Dijonaise”, to a house-made condiment, to “chicken fat mayo”, harking back to the fried chicken that came before (and which will still be available for delivery, presumably thanks to dark kitchens).
Buster’s will also serve natural wine, craft beers and cocktails, while a single dessert has been listed: chocolate mousse with caramel sauce.
“Buster’s feels like a confident progression from Other Side Fried and building on our recent success with Ploussard,” said Kempton.
“It’s been an exciting journey, and we can’t wait to share this next chapter of Buster's with Brixton, and beyond.”
