A Britain's Next Great Chef contestant is set to pull out all the stops for week two of the competition, with a £2,500 served on a mermaid made of ice.
The contestants will be put to the test to create the most opulent dish of their imagining.
The Channel 4 cooking show sees the aspiring restaurateurs use the most rarest ingredients in an effort to make Instagrammable dishes.
In the episode, dishes will range from a price tag of £180 all the way up to £2,500.
Hitting the top end of the budget is Buckinghamshire gastropub owner Anne.
The 49-year-old wows the judges with her concept dish that represents the Before and After Life of a Sturgeon.
She will serve sturgeon mousse, sturgeon ceviche, sturgeon caviar, soy meringues and sea vegetables.
That's not all, as the food is presented on the lap of a huge ice sculptured mermaid.
Despite the stunning creation, Anne doesn't seem to impress all judges as Mike Reid says: “I think there’s way too much going on”.
Ravneet Gill echoed: "It pains me to say it but I think it's 10 years behind so I am wondering if it is fun and modern enough”.
She adds: "I would never pay £2,500 for frozen water."
Will Anne’s creation see her through to the next round?
The programme follows Michelin Star Chef Michel Roux Jr on his search for a chef with an original five-star dining concept worthy of winning the exclusive Palm Court restaurant iconic London hotel, The Langham.
The remaining seven chefs must produce an extravagant dish using the most luxurious ingredients money can buy that would sit as the most expensive on their menu.
Those that fail to impress must also prove themselves at the other end of the budgetary scale as their business acumen is put to the test.
In a fight for survival, four chefs must devise and serve a £30 set menu for the Langham’s discerning lunchtime diners. Global restaurateur Mike Reid oversees service as tensions overflow in the kitchen. Whoever makes the least profit, will be eliminated.
