Behind the scenes at Five Guys: Secret menu hacks, bacon milkshakes and how to stack the perfect burger

It's no secret that the nation loves a burger.

When Five Guys first hit the UK back in 2013, the Covent Garden eatery was met with huge queues of customers snaking around the building.

And the fascination with the American chain hasn't ever really stopped.

Since then, Five Guys has twice knocked Nando's off the top spot as the UK's favourite fast food chain and has opened four restaurants across Greater Manchester - the Trafford Centre, Arndale Centre, Oxford Road and Ashton Moss.

But despite it's impressive reputation and popularity - there are still many things people don't know about the fast food eatery.

So, swapping my usual attire for non-slip shoes, a bright red t-shirt, cap and and apron, I went behind the scenes at the Manchester Arndale restaurant to find out as many Five Guys facts as possible.

1. There are secret menu hacks

The Five Guys menu hasn't changed much since the first store opened in Arlington, Virginia back in 1986.

When it comes to hot food, customers can choose their preferred hot dog, burger or sandwich and can add as many toppings as they like for the same price.

A Five Guys expert has calculated that there are 250,000 ways to customise your burger - so they are many ways to play with the menu.

And staff members revealed that there are some secret menu hacks that those in the know can ask for.

Extra cheese for the same price - Order a cheeseburger or bacon cheeseburger and also add cheese as a topping.

Little known fact - Any of the toppings can be grilled.

Secret menu item - You won't find it on the menu board but you can add a beef patty to a grilled cheese sandwich for an additional charge.

Unlimited patties - For £2 per extra patty you can slap as many as you like on.

We went on a shift to Five Guys to find out the chain's secrets (Five Guys)

2. There's a perfect way to cook fries

Fries are hand-cut in the prep room then they're moved through three to four sinks of cold water.

During this stage the raw fries are agitated (shaken about) in the cold water to remove the starch.

In the last sink so much starch has been removed that the water is crystal clear.

Five Guys make Boardwalk style fries which involves a three-stage cooking process.

1. Pre-cook for roughly two and a half minutes.

2. Cool down from between two and a half minutes to two hours.  

3. Cook for for roughly two and a half minutes (with lots of shaking). 

Staff have a morning and evening meeting to test the fries.

They can tell which fries are perfectly cooked by squeezing the test fries in between their thumbs and fingers and also by pressing the fry to the roofs of their mouths.

3. You get bonus fries every time you order some

Five Guys serve 'toppers' with each portion of fries.

Your selected size cup is filled then a 'topper' scoop is also poured into your bag.

Money saving tip: One portion of large fries is enough to feed three to four people so avoid over ordering.

4. There's a correct way to stack a burger

Bottom bun - Sauce, mushroom, grilled onion, bacon, green peppers, jalapeños

Top bun - Sauce, lettuce, relish, onions, pickles, tomatoes

Carefully place the well-done patty on top of the ingredients on the bottom bun.

Then use the tomatoes (always stacked last on the top bun) to rest your gloved thumbs on so you can carefully flip it on top of the patty.

5. Customers have asked for some odd combinations

In the past, customers have asked for peanut butter on their burgers.

You can also get bacon in your milkshake - sounds strange but it's a popular choice on the menu.

6. They use one of a kind mayo

Heinz has its own signature Five Guys mayonnaise recipe that is sold exclusively to the chain.

7. Five Guys is VERY specific about its potatoes

The American burger chain only source potatoes from 'above the 42nd parallel of the equator'.

8. The Manchester Arndale eatery is popular with celebs

Katy said recently former Coronation Street star Michelle Keegan and husband Mark Wright stopped by for a bite to eat.

And in the same week actor Warwick Davis also visited for his Five Guys fix.

9. There are no freezers

Five Guys only use fresh ingredients so there's no need for freezers in the back.

From the beef patties to the fruit and veg, produce is always fresh and stocked with care.

There's even precise rules on how to stack the fresh boxes of bread that are delivered (no more than ten boxes per stack).

Staff are meticulous with ensuring the right amount of produce is delivered so that waste at the end of the day is minimal.

10. And there are no timers either

Five Guys staff members are well trained and don't rely on time to tell them when the food is ready.

They look out for colour changes in beef patties as they move across the factory line on the grill.

And with fries, they look for signs including fries starting to float in the oil.

11. Five Guys love peanuts

Peanuts were introduced at the first American eatery as a snack for waiting customers who would stand around and watch their burgers being made.

They're still available as a free snack in chains today.

Five Guys fries are cooked in peanut oil - a non-hydrogenated oil with no trans-fats or cholestrol.

12. The 'Five Guys' are real people

The five guys are brothers Jim, Matt, Chad, Ben and Tyler Murrell.

Dad Jerry Murrell started the family-centred business.

He began as one of the 'five guys' but went on to have more sons who would eventually make up the final five.
