MELBOURNE, AUSTRALIA – February 2025 – A new culinary destination is set to open in North Melbourne as Bar Taralli welcomes guests from Wednesday, 19th February. Led by acclaimed chef Salvatore Giorgio, whose experience spans Scopri, Bar Rosella, Bar Bambi, Marnong Estate, and A25 Pizzeria, Bar Taralli brings the flavours of Campania, Puglia, Calabria, and Sicily to Errol Street.
A Chef with a Story
Giorgio’s culinary philosophy is simple: use the best ingredients and let the food do the talking. Inspired by his father, a pizzaiolo, Giorgio’s childhood was filled with bold flavours, from tripe to anchovies, shaping his adventurous approach to Italian cuisine.
Signature Dishes & Wine Selection
The menu at Bar Taralli is a love letter to the Southern Italian regions. Signature dishes include:
- Scialatielli Pasta – A hand-cut pasta from the Amalfi Coast, prepared in its purest form.
- Tazza di Caffè – Giorgio’s unique take on tiramisu, an indulgent end to the meal.
To complement the food, the wine list, curated with Giorgio’s fiancée—an aspiring sommelier—features an exceptional selection of Italian, Australian, and French wines, with a particular focus on Campania, Puglia, Calabria, and Sicily. A dedicated digestivi menu offers classic Italian after-dinner drinks at $12 each.

Ambience & Design
The venue’s simple yet refined decor is enhanced by striking antique elements, including a 50-year-old Parmigiano Reggiano lamp and a 1.5-metre-tall Chianti bottle, over 40 years old. The goal is to transport guests straight to Southern Italy, where warmth, generosity, and great food define the experience.
