Abandoned Edinburgh bakery could be transformed into huge new restaurant

A bakery in Leith has submitted an application with Edinburgh City Council to convert part of their business back into a restaurant.

Breadshare Bakery on Seafield Road in Leith was previously also a restaurant but for the past few years has only served as a commercial bakery and sales point for their goods. They are now wanting permission to convert their premises back into a restaurant again.

Currently, Breadshare has two Edinburgh sites at Seafield Road and nearby on Jane Street. Unfortunately, both of them were forced to close recently, with Jane Street closing in 2021 and their Seafield Road site closing more recently in May of this year.

On their website, Breadshare said: “We have closed our bakery at Seafield Road in Edinburgh from May 2022. We have taken this decision to focus our resources on running the stone-ground flour water mill in Cumbria, where we continue to produce and promote real bread.”

The decision to close their shop on Jane Street was attributed to the ongoing consequences of the Covid-19 pandemic. However, they insisted that the decision was only temporary while they planned new strategies.

According to the posted floor plan, the proposed new restaurant would feature a large, open plan seating area at the front of the shop, divided from the entrance by a partition. The back of the new business would include the small kitchen, staff area and emergency exits to the street.

The plans are currently making their way through Edinburgh City Council’s planning process and were validated for pre-planning permission at the end of July. Currently, the council is open to comments from the public about the proposed development, the last day to submit public comments is August 18.
